    cup
    oregano

Instructions

  1. Preheat oven to 450 levels.

  2. Line a rimmed baking sheet with parchment.

  3. Toss cherry tomatoes in olive oil, spreading on ready baking sheet.

  4. Sprinkle with salt.

  5. Roast for 20 minutes, till skins blister and burst.

  6. Let cool.

  7. Rinse and drain lettuce, inserting in a shallow bowl.

  8. Add cucumber, purple pepper, purple onion and olives.

  9. Whisk purple wine vinegar, dijon, garlic, oregano, salt and pepper in small bowl till properly mixed.

  10. Slowly whisk in olive oil till emulsified.

  11. Drizzle dressing over salad combination.*

  12. Top with feta and contemporary oregano.

Recipe Notes

*Dress to desired style — leftover dressing will maintain for one week refrigerated. Bring to room temperature & whisk earlier than re-serving.
